Vernal Equinox, Picture Post Thursday
Friday is the vernal equinox, and a holiday in Japan. In strange fashion I will take a holiday off and not work for 3 full days straight. It kinda helps that we have a very important weekend ahead of us. A trip to Maebashi Gumma, about 2 hours inland from Tokyo, to see Ayako’s parents. It’s late now, and we are all packed up, time to get some sleep before waking up and jumping on the train out of town.
Since I wont have internet access for the next 3 days, I obviously won’t be posting (I’m not going to pre-publish any posts here - I prefer to write nightly and just say whats on my mind then). And since one of my favorite weekly posts is the picture post - you will get it today

This new apartment next to our current one is almost finished, I bet it will open up by the end of April.

For lunch I walked in a new direction today to find a convenience store and buy an onigiri (rice ball with tasty food inside it). If you can read the map - I was there.

Seems cats have it worse here, they are restricted from even more things.

Ummm, yummy supper time! At the bottom we have stir-fried cabbage carrots rice, with a piece of pork on top and squid-sticks around the edges!

And at the top we have my pride and joy - my own homemade MegaNikuMan!!! Yes, I did in fact make this. A NikuMan is “meat-man” or a tasty treat found here in Japan. Outside is doughy and inside is meat. I decided to upsize the favorite Japanese snack and turn it into a MegaNikuMan - and it turned out very tasty if I do say so myself.

As promised…. this is a really easy recipe haha, and not really worthy of the name (the nikumans in the store a much better, but i think this has a lot of potential).
*put pancake mix in a bowl
*mix in 1 egg
*pour in 150ml of water
*mix until it is consistent (should look just like pancake mix)
*preheat (microwave) some teriyaki or wet bbq pork, add minced onion and celery if you like
now pour the batter into a microwave safe bowl until the bowl is half full. Place your preheated meat into the middle of the batter, and finally cover the meat with the remaining batter.
++do not fill the bowl more than 3/4
*now place the bowl on the edge of the spinning platter inside the microwave (not in the center). Depending on the bowl size it should take approx 3-5 minutes for the batter to turn into bread. It should expand above the top of the bowl and separate from the edges of the bowl.
When finished take out the bowl and use a spatula to drop the MegaNikuMan onto a plate.
“Itadakimasu!”
